It’s been a little over a week since Ryan and I have started our plant-based diets. I think our bodies are still in an adjustment phase, but so far we like the results we are feeling. I told you in one of my previous posts how Ryan lives and breathes meat and cheese. He’s been doing a lot better about his willingness to try different foods. He even loved the lentil tacos I made! But when I told him these sandwiches were on the list I saw him flinch. If there’s anything Ryan loves, it’s a good sandwich…stacked with meat and cheese. Followed by more meat and cheese. But after he devoured this sandwich, he was on board.
What made him love the sandwich so much? Honestly, it was the balsamic vinegar and pepper. Good flavor is crucial to the makings of any sandwich. This is even more true when you’re dealing with, let’s face it, super bland vegetables. The balsamic vinegar helped keep the sandwich moist while packing a punch with it’s sweet tang. While it’s no slice of tangy cheddar, it still makes the taste buds do a little dance, make a little love, and get down tonight. Okay, did I go too far?
I will leave you with these words from a very wise cartoon Tiger, “You gotta try new foods cause they might taste goooood!” Uga-muga!
Classic Veggie Sandwich
Give this easy veggie sandwich a try and you’ll be surprise at how good veggies can taste. Catch a glimpse at our next recipe on Instagram! These Zucchini Muffins would make a great side kick!
- whole grain bread
- zucchini
- English cucumber
- tomato
- avocado
- red onion
- spinach
- pepper
- balsamic vinegar
- Slice the zucchini length wise, making slices the same length as the bread.
- Cut the avocado in half. Use a knife to spread the avocado on both sides of the bread.
- Layer bread with zucchini, cucumbers, red onion, tomatoes and spinach.
- Top with second slice and cut in half.
