Classic Veggie Sandwich

  • whole grain bread
  • zucchini
  • English cucumber
  • tomato
  • avocado
  • red onion
  • spinach
  • pepper
  • balsamic vinegar
  1. Slice the zucchini length wise, making slices the same length as the bread.
  2. Cut the avocado in half. Use a knife to spread the avocado on both sides of the bread.
  3. Layer bread with zucchini, cucumbers, red onion, tomatoes and spinach.
  4. Top with second slice and cut in half.
