Italian Tortellini Soup
Recipe type: dinner
  • 1 pound sweet Italian turkey sausage
  • ½ yellow onion
  • 2 cloves of garlic
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 ounces tomato sauce
  • 80 ounces beef broth
  • 1½ tablespoons Italian seasoning
  • 2 zucchini, diced
  • 2 large carrots, peeled and diced
  • 1 small package cheese tortellini (or half of a large)
  1. Remove sausage from the casing and add to a large preheated pot. Break sausage up and cook for 1-2 minutes. Add salt, pepper, onions and garlic to the pot and continue cooking.
  2. When there is just a little pink left, add the tomato sauce, beef broth, carrots and Italian seasoning.
  3. Bring to a low simmer for 2-3 minutes.
  4. Add zucchini and tortellini. Simmer until tortellini is cooked through.
  5. Turn off heat and let sit for 5 minutes before serving.
  6. Garnish with parmesan cheese and serve with foccacia bread sticks.
