What’s better than Peanut Butter Banana Muffins? Mini versions made in the blender!
I am totally okay with this whole make things in a blender fad. I’m working on a recipe for someone right now and so I’m slightly obsessed. These bad boys are, well actually not so bad. My kids usually eat 4 mini muffins in a sitting and because it’s bananas and peanut butter in teeny tiny form, I’m totally okay with it! Also, it keeps their hands busy and their mouths full.
For those 2 minutes it takes them to eat their muffins, I hear nothing but silence and then the occasional, “mmm, these are good mom, mmm”. And the little guy who copies everything big brother does say, “mmm, good mom”.
I don’t know what it’s like at your home, but when my oldest tries to get my attention, he says my name at least 3 times before it’s even registered that someone has said my name. And by that point, I’ve had it, and the conversation hasn’t even started. We’ve now taught him to say “excuse me” thinking he would automatically know that you’re supposed to say excuse me once then wait for a response. So instead of, “mom, mom, mom” I hear, “scuse me, scuse me, scuse me mom, scuse me”. #facepalm
Yes, it’s just a phase. As much as it may irk me in the moment, at the end of the day as I think back to all those moments that drove me absolutely crazy, I can’t help but chuckle. Those little blonde hair, blue-eyed boys are adorable.

Mini Peanut Butter Banana Muffins
This kid-friendly recipe is not only easy, it is delicious!
- 2 bananas
- 1 cup peanut butter
- 2 eggs
- ½ t baking soda
- 1 T honey
- ¾ cup mini chocolate chips
- Put banana and eggs in the blender.
- Add peanut butter, baking soda and honey. Blend until smooth.
- Stir in half a cup of chocolate chips.
- Line a mini muffin tin with liners. Fill each one with a tablespoon of batter and top with the remaining chocolate chips.
- Bake at 400 for 7-9 minutes.
