I have to admit, I’m not a fan of white chocolate. At least, I wasn’t until I tried a new drink at Starbucks, the Coconut Mocha Macchiato. The hint of white chocolate in coconut milk is my new favorite combination. So of course, I had to try a lightened up version at home. Though it’s one of their lower calorie drinks, I still wanted it to be as clean as possible. Now how clean this recipe is, I’m not sure, but it sure does make me feel better about drinking it! Haha, whatever it takes, right?
Now while the white chocolate and coconut milk combination is new to my taste buds, I know I’m not the first to try it. It’s one of my sister-in-law’s favorites when the pumpkin spice isn’t in season. But I’ve always been a little skeptical of coconut milk because, well, I tried it once and didn’t like it. So why would I try it again? Because I couldn’t help myself! I’ve given up dairy for the month and seeing this on the menu really intrigued me, and now I’m sold.
The first time I tried this recipe was actually with unsweetened vanilla almond milk which is my go-to nondairy choice, but now my fridge is stocked with both. Almond milk is still 15 calories less a serving than coconut milk and there are days when I like to save where I can but some days, pssh, forget it.
If you try this recipe with both milks, let me know what you think!
